SMARTIES® Cupcakes - a fun treat that can’t help but make you happy
Our SMARTIES® Cupcake recipe brings a colourful twist on a traditional cupcake. The mesmerising rainbow swirls make a great show-stopper for parties with friends and family and will definitely impress kids too. Follow the steps below for these deliciously colourful cupcakes.

You'll Need:
43g White SMARTIES® Buttons
100g light spread
100g caster sugar
150g self-raising flower, sieved
2 medium eggs
1tsp drops of vanilla essence (4.2g)
125g icing sugar
15ml warm water
2 drops of natural food colouring of your choice (4.2g)
18 cupcake cases

Heat oven to 180°C/392F/Gas mark 6 and place the cupcakes cases into the cupcake baking tray.

In a large bowl add the baking spread, flour, sugar and vanilla extract. Then beat in the eggs lightly with a handheld electric mixer until evenly mixed.

Divide the mixture evenly into 18 cupcake cases.

Bake for 20-25 minutes, or until the cakes are well risen and firm on top. Carefully transfer to a wire rack to cool.

Sift the icing sugar into a bowl and gradually add warm water until the icing becomes thick enough to coat the back of a spoon.

Split the icing into thirds and add to separate bowls. Colour each bowl of icing with natural food colouring.

Carefully spoon one colour of icing down one side of a piping bag. Add the second colour of icing down another side and finish the same with the third colour of icing.

Pipe swirls of icing on top of each cupcake.

Finish decorating with 1 white SMARTIES® Button on each cupcake.
