You'll Need:

55g Light spread

55g Caster sugar

1 Egg, large

½ tsp Vanilla extract

55g Self raising flour

75g Dark chocolate, chopped up

75ml Whipping cream

24g Smarties

SMARTIES® Mini Cupcakes in Easy Steps

    Put the dark chocolate and the whipping cream into a microwave safe bowl. Microwave for 30 seconds on high, stir together until smooth and combined. If the chocolate is not yet fully melted, microwave for a further 10 seconds. Set aside to cool

    Pre-heat your oven to 160C Fan and line a mini cupcake tin with mini cupcake cases

    To make the cupcakes, use an electric mixer to mix together the light spread and caster sugar for 3 minutes, until fluffy and aerated

    Add the egg and vanilla extract, and mix until combined 

  5. 5

    Add the self raising flour and fold in gently with a spatula or spoon

    Divide the batter between the cupcake cases, this is easier to do with a piping bag, but you can also use a small spoon

    Bake the mini cupcakes for 15 minutes, or until risen and lightly golden. Transfer them to a cooling rack and leave to cool fully

    When you are ready to decorate, use an electric mixer to whisk the ganache for 2 minutes, until it is lighter in colour and has a mousse like texture. Transfer the mixture to a piping bag fitted with the nozzle of your choice

    Pipe the whipped ganache onto each cupcake and decorate with the Smarties
